Caesar's Mushroom Season — Mediterranean Italy

The Caesar's mushroom (Amanita caesarea) is the most prized table mushroom in Mediterranean Europe — distinguished by its vivid orange-red cap, yellow gills, and egg-like emergence from its white volva, and considered the superior fungus by Roman writers from Pliny through Apicius. Its season in the oak and chestnut forests of Umbria, Lazio, and Calabria from July through October coincides with the height of the Italian mushroom season, and the sight of a Caesar's mushroom emerging from its white egg in the October leaf litter — the orange cap splitting the white envelope as the stem elongates — is one of the most beautiful single events in the temperate fungal world.
